If your looking for an easy coffee cake recipe, this one’s for you. Not only is this recipe easy, it’s super delicious. Having overnight guests? They will surely appreciate a slice of easy blueberry coffee cake with their morning coffee and you’ll appreciate the ease with which it takes to make it. Made with a boxed yellow cake mix, active dry yeast and blueberry pie filling this recipe put the ‘e’ in easy. The vanilla glaze adds the right amount of sweetness.


Change it Up
Not a fan of blueberries?? Hey, no problem. You can change the flavor of this delicious coffee cake just by changing the pie filling. You can use cherry, strawberry, apple or lemon fruit pie filling. Use the pie filling that you and your family likes. Want to really change it up?? Try a poppy seed filling, date-nut filling or even a prune filling. Canned pie filling works nicely in this recipe if you don’t have homemade.

Easy Blueberry Coffee Cake
Ingredients
- 1 18 1/4 oz box yellow cake mix
- 1 cup flour
- 1 1/4 oz package active dry yeast
- 2/3 cup warm water, 120 to 130 degrees
- 2 eggs, lightly beaten
- 1 21 oz can blueberry pie filling
- 1/3 cup cold butter
- Vanilla Glaze
- 1 cup confectioners' sugar
- 1 tablespoon white corn syrup
- 1 to 2 tablespoons milk
Instructions
- In a large bowl combine 1-1/2 cups cake mix, flour, yeast and water until smooth. Stir in eggs until well blended. Transfer to a greased 13 x 9 baking dish. Gently spoon pie filling over top.
- In a small bowl, place remaining cake mix, cut in butter until crumbly, sprinkle over filling.
- Bake at 350º for 35 to 40 minutes or until lightly browned.
- Cool on wire rack. Meanwhile make vanilla glaze.
- Combine confectioners sugar, corn syrup and milk. Stir until you reach desired consistency.
- Drizzle over cake.
