Welcome Back!! Today I’m going to share with you one of my favorite recipes for fish, Baked Lemon Haddock. I found this recipe in the Taste of Home Healthier Cooking Annual Recipes 2022. It’s make very few ingredients, most of which you probably have on hand. This recipe is perfect to serve during this Lenten season. Let’s get started.
Haddock
If you have been reading my blog for any length of time, you know that the haddock I prefer and use exclusively is The brand Icelandic. In all of the many years that I have been buying and preparing haddock from Icelandic, I’ve never once had a bad batch, never. I’m not a fan of salmon or tuna, I’ve tried to like it because it’s good for you too no avail. I’m not particularly fond of shellfish either. But I do love my haddock, perch, trout and halibut.
a Haddock can be purchased in 5 lb. box or in individual packages in most grocery stores. I prefer to purchase haddock in the 5 lb box. It’s cheaper and I always have haddock in my freezer. It’s a win win!
Bake Lemon Haddock
Ingredients
- 2 pounds haddock fillets
- 1 cup seasoned dry bread crumbs
- 1/4 cup butter, melted
- 2 tablespoons dried parsley flakes
- 2 teaspoons grated lemon zest
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 350°. Cut fish into 6 serving-sized pieces. Place in a greased 11x7-in. baking dish. Combine remaining ingredients; sprinkle over fish. Bake until fish just begins to flake easily with a fork, 20-25 minutes.
