Slow Cooker Wendy’s Style Chili

Before my hubby and I made the move to live up north and escape city life, we liked to go to auctions. We’d get up bright and early on Saturday morning and head out. Most auctions that we attended we’re over by early afternoon, usually around 1 pm. By this time we’d be darn hungry and depending on how cold it was outside, usually would determine where we’d eat. Slow Cooker Wendy’s  Style Chili is perfect on a cold, winter’s day.

Since Wendy’s wasn’t far from the auction site, (auctions were held in the same building every week) we would usually stop there. The $1.00 menu may have had something to do with it also. We’d each get an order of chili, mine with cheese, the hubby’s without. Slow Cooker Wendy’s Style Chili might not be exactly like the chili served at Wendy’s, maybe not even close but each time I make this version, I think of those days gone by.

What’s Needed

To make slow cooker Wendy’s Style Chili you’ll need these ingredients:

  • ground beef and ground pork
  • green bell pepper
  • onion, celery and garlic
  • spices such as; salt, pepper, ground cumin, chili powder, cayenne pepper, ground chipotle pepper and an envelope  of your favorite chili seasoning mix.

Of course you don’t want to forget the canned kidney beans, chili beans, and black beans. Along with canned chopped tomatoes, diced tomatoes with green chilies and tomato sauce. Combine these ingredients together in a crockpot and you’ll be enjoying a big bowl of chili for dinner.

Ingredients

  • 1 pound each ground beef and pork
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 4 stalks celery, diced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground chipotle pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon liquid smoke, optional
  • 1 14 ounce can kidney beans drained and rinsed
  • 1 28 ounce can diced tomatoes, undrained
  • 1 15 ounce can tomato sauce
  • 2 10 ounce cans diced tomatoes with green chilies
  • 1 15.5 ounce can mild chili beans
  • 1 15 ounce can black beans, drained and rinsed
  • 1 1.25 ounce envelope chili seasoning mix

Instructions
 

  • Heat a large skillet over medium heat. Cook the ground beef and pork. Season with salt and pepper, continue to brown until no longer pink inside.
  • Add in the green pepper, onion, celery and garlic. Cook for 2 minutes. Drain the fat from the skillet.
  • Add the beef mixture to the slow cooker. Stir in the rest of ingredients.
  • Cook on low for 6 to 8 hours or on high for 2 to 4 hours. Serve with diced red onion, corn chips, sliced jalapenos, shredded cheese, sour cream, and/or fresh cilantro.

Serve this chili with shredded Mexican cheese, sour cream, guacamole and/or corn chips. You can also serve Slow Cooker Wendy’s Style Chili with cornbread or oyster crackers.
