Lemon Chip Sugar Cookies are light, delicate and lemony. A bite of Springtime in every cookie. A sugar cookie with the slight taste of lemon. If your a fan of lemon or sugar cookies or both, you will surely want to try these super delicious cookies. The sugar cookies are studded with lemon flavored chips that add just the right amount of lemon flavor, making these crispy sugar cookies fantastic.
Bulk Foods
When I travel to the “big” city of Appleton WI, I like to stop at the bulk food store and stock up on “hard to find in my up north area” items such as; shaped pasta, extracts, sprinkles, candies and lemon flavored chips featured in this recipe. I stop at the bulk food store rightfully called the Bulk Priced Food Shoppe. The bulk food store is locate in Greenville WI which is located in Grand Chute. Not far from the Timber Rattlers Stadium.
Flavored Chips
I have purchased these lemon flavored chips many times. The flavor is light and lemony without that waxy, artificial taste that often accompanies all flavored chips. The cherry flavored chips, which I have also purchased are great too. If you ever get to the Grand Chute area, stop in and visit the bulk food store. You will be surprised at the things you’ll find there. Light, Lemony Sugar Cookies are the perfect Springtime treat.
Lemon Chip Sugar Cookies
Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup butter, room temperature
- 1/2 cup sugar
- 1/4 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon lemon extract
- 2 cups lemon flavored chips
Instructions
- Preheat oven to 350° Line a baking sheet with parchment paper.
- In a small bowl, stir together flour, baking soda and salt. Set aside.
- In a large bowl, cream together sugar, brown sugar, butter and
- lemon extract with an electric mixer until light and fluffy.
- Beat in egg. Add the flour mixture and stir just until combined.
- Fold in lemon chips. Roll dough into 1 inch balls.
- Place on prepared baking sheets and gently press down with your fingers.
- Bake 9 to 11 minutes. Remove from baking sheets and cool on wire racks.
