With temperatures dipping to -8 degrees..
a chilly -25 degrees below zero with the wild chill,
here in Northern WI...
Old Fashioned Porcupine Meatballs are
comfort food at it's best.

Serve these delicious meatballs for supper tonight with
a baked potato or additional cooked rice,
add your favorite vegetable or tossed salad and
you'll have a comforting meal everyone will love~



It's going to be a cold day for a football game!


Old Fashioned Porcupine Meatballs

Ingredients
  • 1 pound ground round
  • 1/2 cup rice, uncooked
  • 2 tablespoons minced onion
  • 1 garlic clove, minced
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 egg, slightly beaten
  • 2 tablespoons ketchup or barbecue sauce
  • 1 tablespoon Dijon mustard
  • 14 saltine crackers, crushed
  • 2 cups tomato juice
  • 2 tablespoons brown sugar
  • 1/4 teaspoon chili powder
Cooking Directions
  1. Preheat oven to 350º
  2. Mix together ground round, rice, minced onion, chili powder, salt, Worcestershire sauce, beaten egg, ketchup or barbecue sauce, crushed saltine crackers. Shape mixture into 1-inch balls.
  3. Place meatballs in a 2 quart casserole dish.
  4. Make sauce: Mix together tomato juice, brown sugar and chili powder. Pour sauce over meatballs. Cover and bake for 90 minutes.
