Pumpkin Spice Rice Krispie Treats

Pumpkin Spice Rice Krispie Treats or “Tombstones” are delicious, like all krispie treats are but these special treats get their pumpkin spice flavor from instant pumpkin spice pudding mix. Not only that, these delicious treats have mini chocolate chips added and they’re “frosted” with melted white chocolate chips. Another thing, you don’t need to wait until Halloween to make these treats. Stock up on pumpkin spice flavored instant pudding and pie mix and you can make them throughout the year.

Tombstone Cookie Cutter

To make these rice krispie treats into a shape of a tombstone, use a tombstone cookie cutter or use a knife to cut them out. I also made these treats in a 15 x 10 x 1-inch “jelly roll” pan, making the treats fairly thin and easier to cut out too. Rice Krispie treats are delicious anyway you make them. People of all ages love rice krispie treats and now you can buy individually wrapped marshmallow treats. Perfect to toss into your kids lunch boxes.

Recipe Note:

You don’t need to cut these rice krispie treats into any shape at all if you don’t want too. Simple cut them out and hand them out! If your family is like mine, they’ll eat these pumpkin spice krispie treats no matter what shape they’re in. With the many new and improved flavors that come out each holiday season, you can change up the flavor of rice krispie treats any number of ways. As mentioned above cinnamon flavored chips or pumpkin spice flavored chips can be substituted. And we haven’t even mentioned the many new and improved flavors of marshmallows to choose from. Let’s just say that Rice Krispie Treats can and should be taken to new flavor heights.

Pumpkin Spice Rice Krispie Treats

Ingredients

  • 1 10 oz package marshmallows
  • 3 tablespoons butter
  • 3 tablespoons instant pumpkin spice pudding mix
  • 6 cups crisp rice cereal
  • 1 cup mini chocolate chips
  • 1/2 teaspoon shortening
  • 1 cup white chocolate chips or cinnamon chips
  • brown or black decorating gel

Instructions
 

  • In a large saucepan, combine marshmallows and butter, stir over medium-low heat until melted.
  • Remove from the heat; stir in pudding mix until blended. Stir in cereal.
  • Stir in mini chocolate chips. Press into a buttered 15-in x 10-in x 1-in pan.
  • Refrigerate for 30 minutes.
  • Using a 3 or 4-inch tombstone shaped cookie cutter, cut out shapes.
  • In a shallow microwave-safe dish, heat the white chocolate chips or cinnamon flavored chips with shortening at 50% power until melted; stir until smooth.
  • Frost tombstone tops with melted white or cinnamon chip mixture; place un-frosted side down on foil.
  • Let set up for one hour.
  • With brown or black decorating gel, write on tombstones.
  • Let stand until set. Gently remove from foil.
