Ingredients
4strips bacon, chopped
3tablespoonsrice vinegar
3tablespoonshoney
5teaspoonsolive oil
1teaspoonDijon mustard
1/2teaspoonpepper
1/4teaspoonsalt
16 oz packagefresh baby spinach
2 mediumnavel oranges, peeled, separated and chopped
1 tablespoonfresh orange juice
1/2teaspoonfresh orange zest
6fresh strawberries, sliced
1/2cupthinly sliced cucumber
1/2cupthinly sliced red onion
1/2 cupchopped pecans, toasted
Instructions
In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon to drain. Set aside.
In a small bowl, whisk together the vinegar, honey, oil, mustard, pepper, salt, orange juice and orange zest. In a large bowl, combine the spinach, oranges, strawberries, cucumber, and onion. Pour dressing over salad and toss to coat. Sprinkle with pecans and bacon. Serve immediately.
