2 each mini sweetyellow, orange and red peppers, finely chopped
1 smallgreen pepper, finely chopped
1/2 smallonion, finely chopped
2 celery ribs, chopped
1 or 2 dill pickles, diced
2tablespoons minced fresh parsley
Instructions
Cook macaroni according to package directions. Drain; rinse with cold water and drain again.
In a small bowl, mix mayonnaise, milk, vinegar, sugar and seasonings until blended. In a large bowl, combine macaroni, peppers, onion, celery and pickles. Add dressing; toss gently to coat. Refrigerate, covered, 2 hours or until chilled.
Before serving, stir in the extra 2 tablespoons mayonnaise if necessary. Sprinkle with chopped parsley.
