Easy Summer Macaroni Salad

Kick off the summer with this Easy Summer Macaroni Salad. Chances are, you already have all of the ingredients. In fact, I keep the ingredients on hand during the summer months so I can whip up this pasta salad on a minutes notice. This easy pasta salad can be made to order or in other words, the way your family likes it. A few suggestions would be to add; capers, dill pickles, shredded carrots or chopped celery. You can also use a reduced-fat mayonnaise or an olive oil mayonnaise. I used Hellmann’s to make this pasta salad because that’s what we like.

Memorial Day Weekend

Not sure about you but I have no idea where the month of May went too nor can I believe it’s almost Memorial Day weekend!! After what seems like months, I’ve finally got my YouTube channel looking ok. New thumbnails, better descriptions, links    to recipes and so on and so forth. Now I can concentrate on writing posts and making videos. Plus I’ll have more time to edit any new uploaded videos. Work, work, work! Actually I love doing the videos and have several I need to work on. Since Memorial Day weekend officially kicks off summer, my grand-daughters will be coming every weekend in the months of June and July. They’re super excited and so are we!

What’s Needed

Macaroni or pasta salads should be really easy to make and require simple yet delicious ingredients. What’s needed are simple ingredients like these:

  • Macaroni or any Shaped Pasta
  • Mayonnaise
  • Mini Sweet Peppers
  • Onion, Red Onion, Vidalia Onion
  • Green Bell Pepper
  • Celery
  • Dill Pickles or Capers
  • Seasonings, Sugar, Red Wine Vinegar

A combination of any of these simple ingredients will get you started on your pasta salad making journey. What’s nice about pasta salads is anything goes! The additional two tablespoons mayo listed in the ingredients is optional. Some people like their pasta salads super creamy but I on the other hand, prefer my pasta salads “moist” for lack of a better word. Make your pasta salads how you like them and most importantly enjoy!

Ingredients

  • 1- (16 oz.) package elbow macaroni
  • 1 cup Hellman’s mayonnaise, plus 2 tablespoons
  • 3 to 4 tablespoons milk
  • 2 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 2 each mini sweet yellow, orange and red peppers, finely chopped
  • 1 small green pepper, finely chopped
  • 1/2 small onion, finely chopped
  • 2 celery ribs, chopped
  • 1 or 2 dill pickles, diced
  • 2 tablespoons minced fresh parsley

Instructions
 

  • Cook macaroni according to package directions. Drain; rinse with cold water and drain again.
  • In a small bowl, mix mayonnaise, milk, vinegar, sugar and seasonings until blended. In a large bowl, combine macaroni, peppers, onion, celery and pickles. Add dressing; toss gently to coat. Refrigerate, covered, 2 hours or until chilled.
  • Before serving, stir in the extra 2 tablespoons mayonnaise if necessary. Sprinkle with chopped parsley.
