Double Banana Nut Crunch Bread

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups (about 4 mediumashed bananas
- 2 egg whites
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 1/2 cups banana nut crunch cereal
- 1/2 cup chopped walnuts
Grease bottom and 1/2 inch up sides of a mini loaf pans (4). Set aside.
In a medium bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
Make a well in center of dry ingredients.
In another bowl, combine mashed bananas, eggs, oil and water.
Add banana mixture all at once to dry ingredients; stir just until moistened.
Fold in cereal and walnuts. Spoon into prepared pans.
Bake at 350 for 50 to 60 minutes or until a toothpick inserted in center comes out clean.
Cool in pans on wire rack for 5 minutes.
Remove from pans; cool completely on wire rack
