Double Banana Nut Crunch Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups (about 4 mediumashed bananas
  • 2 egg whites
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1 1/2 cups banana nut crunch cereal
  • 1/2 cup chopped walnuts

Instructions

  • Grease bottom and 1/2 inch up sides of a mini loaf pans (4). Set aside.
  • In a medium bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  • Make a well in center of dry ingredients.
  • In another bowl, combine mashed bananas, eggs, oil and water.
  • Add banana mixture all at once to dry ingredients; stir just until moistened.
  • Fold in cereal and walnuts. Spoon into prepared pans.
  • Bake at 350 for 50 to 60 minutes or until a toothpick inserted in center comes out clean.
  • Cool in pans on wire rack for 5 minutes.
  • Remove from pans; cool completely on wire rack
