Easy Blueberry Coffee Cake

A fast, easy and delicious recipe for coffee cake. Switch out the blueberry pie filling for your favorite fruit pie filling.

Ingredients

  • 1 18 1/4 oz box yellow cake mix
  • 1 cup flour
  • 1 1/4 oz package active dry yeast
  • 2/3 cup warm water, 120 to 130 degrees
  • 2 eggs, lightly beaten
  • 1 21 oz can blueberry pie filling
  • 1/3 cup cold butter
  • Vanilla Glaze
  • 1 cup confectioners' sugar
  • 1 tablespoon white corn syrup
  • 1 to 2 tablespoons milk

Instructions

  • In a large bowl combine 1-1/2 cups cake mix, flour, yeast and water until smooth. Stir in eggs until well blended. Transfer to a greased 13 x 9 baking dish. Gently spoon pie filling over top.
  • In a small bowl, place remaining cake mix, cut in butter until crumbly, sprinkle over filling.
  • Bake at 350º for 35 to 40 minutes or until lightly browned.
  • Cool on wire rack. Meanwhile make vanilla glaze.
  • Combine confectioners sugar, corn syrup and milk. Stir until you reach desired consistency.
  • Drizzle over cake.
