Jumbo Banana Muffins

These super large, jumbo banana muffins are made with a new and fantastic product; Kodiak Cakes Frontier Flapjack and Waffle Mix, Buttermilk and Honey.

Ingredients

  • 1 box (24 oz) Kodiak Cakes Flapjack and Waffle Mix, Buttermilk and Honey
  • 2 cups buttermilk
  • 1/2 cup fructevis
  • 4 tablespoons molasses
  • 2 eggs
  • 1 stick butter, softened
  • 4 ripe bananas, mashed
  • 4 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts, optional

Instructions

  • Preheat oven to 350 degrees. Grease 2 jumbo muffin pans. Set aside
  • Combine all ingredients in a large mixing bowl and blend until smooth. Fill greased muffin cups 3/4 full.
  • Bake at 350 for 18-22 minutes or until a toothpick inserted in muffin comes out clean and muffins are golden brown.
  • Recipe makes 12 jumbo muffins. Muffins freeze well.

Notes

*You can substitute 1 cup lightly packed brown sugar for the 1/2 cup fructevia and 4 tablespoons molasses.*
