Ingredients
1box (24 oz)Kodiak Cakes Flapjack and Waffle Mix, Buttermilk and Honey
2cupsbuttermilk
1/2cupfructevis
4tablespoonsmolasses
2eggs
1stickbutter, softened
4ripe bananas, mashed
4 teaspoonsground cinnamon
2 teaspoonsvanilla extract
1cupchopped walnuts, optional
Instructions
Preheat oven to 350 degrees. Grease 2 jumbo muffin pans. Set aside
Combine all ingredients in a large mixing bowl and blend until smooth. Fill greased muffin cups 3/4 full.
Bake at 350 for 18-22 minutes or until a toothpick inserted in muffin comes out clean and muffins are golden brown.
Recipe makes 12 jumbo muffins. Muffins freeze well.
Notes
*You can substitute 1 cup lightly packed brown sugar for the 1/2 cup fructevia and 4 tablespoons molasses.*
