Italian Sausage and Pasta Pot
A delicious and hearty meal.

- 1 tablespoon olive oil
- 8 Italian sausages
- 16 ounces penne pasta, cooked until al dente'
- 2 cups hot chicken stock
- 2 thinly sliced carrots and 1 small onion sliced
- 3 stalks celery, sliced
- 1 Handful of chopped flat-leaf parsley
- 1 cup green beans, sliced in half
In a large skillet, heat the oil. Fry the sausages until browned. Pour in the hot chicken stock and simmer, covered for around 10 minutes.
Add the pasta to the pan, mix well, bring to boil. Stir in the onions and carrots, cook for five minutes.
Add the green beans and celery, cook for another five minutes. Simmer until the pasta and vegetables are tender, cook a few minutes more, if needed.
Finally, stir in the chopped parsley, season with salt and pepper. Serve with grated Parmesan cheese.
