Italian Sausage and Pasta Pot

Ingredients

  • 1 tablespoon olive oil
  • 8 Italian sausages
  • 16 ounces penne pasta, cooked until al dente'
  • 2 cups hot chicken stock
  • 2 thinly sliced carrots and 1 small onion sliced
  • 3 stalks celery, sliced
  • 1 Handful of chopped flat-leaf parsley
  • 1 cup green beans, sliced in half

Instructions

  • In a large skillet, heat the oil. Fry the sausages until browned. Pour in the hot chicken stock and simmer, covered for around 10 minutes.
  • Add the pasta to the pan, mix well, bring to boil. Stir in the onions and carrots, cook for five minutes.
  • Add the green beans and celery, cook for another five minutes. Simmer until the pasta and vegetables are tender, cook a few minutes more, if needed.
  • Finally, stir in the chopped parsley, season with salt and pepper. Serve with grated Parmesan cheese.
