Mexican Street Corn Elote Dip

Ingredients

  • 2 12 oz. pkgs. Season's Choice Steamed Elote Style Corn
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chicken stock
  • 1 1/2 tablespoons hot sauce
  • 2 1/2 tablespoons fresh lime juice
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon tajin seasoning
  • 1/2 teaspoon fresh ground pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup crumbled cotija cheese
  • 1/3 cup minced cilantro
  • juice from two limes
  • corn chips for dipping

Instructions

  • Steam corn according to package directions. Carefully open bags of steamed corn. Pour into a bowl to cool. Preheat oven to 350°
  • In an oven-proof 2 or 3 qt. baking dish, mix mayo, sour cream, chicken stock, hot sauce, lime juice, sugar, salt, pepper, tajin seasoning, cayenne pepper, and cheese. Stir cooled corn into creamed mixture.
  • Bake for 45 minutes to 1 hour.
  • Remove from oven and allow to cool for 10 minutes. Stir in minced cilantro and extra lime juice. Serve with corn chips.
