sour cream

chicken stock

hot sauce

fresh lime juice

teaspoon
sugar

teaspoon
salt

teaspoon
tajin seasoning

teaspoon
fresh ground pepper

teaspoon
cayenne pepper

cup
crumbled cotija cheese
1/3
cup
minced cilantro
juice
from two limes
corn chips for dipping
Instructions
Steam corn according to package directions. Carefully open bags of steamed corn. Pour into a bowl to cool. Preheat oven to 350°
In an oven-proof 2 or 3 qt. baking dish, mix mayo, sour cream, chicken stock, hot sauce, lime juice, sugar, salt, pepper, tajin seasoning, cayenne pepper, and cheese. Stir cooled corn into creamed mixture.
Bake for 45 minutes to 1 hour.
Remove from oven and allow to cool for 10 minutes. Stir in minced cilantro and extra lime juice. Serve with corn chips.
