Ingredients
116 oz package whole wheat penne pasta
1/2cupolive oil
1/2cupwhite wine vinegar
1/3cupgrated Parmesan cheese
1tablespoonDijon mustard
2clovesgarlic, minced
1tablespoonfresh squeezed lime juice
1teaspoondried oregano
1/4teaspoonsalt
1/4teaspoonpepper
16 oz package fresh baby spinach
3mediumtomatoes, seeded and chopped
16 oz jarmarinated artichoke hearts, drained
3/4cupcrumbled feta cheese
4green onions, thinly sliced
1/2cuppitted Greek olives
Instructions
In a Dutch oven, cook pasta according to package directions. Drain and rinse in cold water; drain again.
Meanwhile, in a small bowl, whisk together the vinaigrette ingredients. In a large bowl, combine the pasta, spinach, tomatoes, artichoke hearts, feta cheese, onions and olives. Add vinaigrette; toss to coat. Serve immediately.
