- 1/2 cup brown sugar
- 1 packet vanilla sugar, optional
- 1/2 cup butter, room temperature
- 3 to 4 mashed ripe bananas
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 2 tablespoons ground flaxseed
- 1/2 cup coconut or almond milk
- 1/2 cup oatmeal
- 1/2 cup chopped dates
- 1/2 cup sliced almonds, optional
Preheat oven to 350°F
Beat sugar and butter together in a bowl. Beat in mashed bananas, beaten eggs and vanilla extract.
Sift together all dry ingredients and fold into banana mixture. Stir in coconut or almond milk just until moistened.
Fold in oatmeal, dates, sliced almonds or any extra ingredients you like.
Spoon batter into greased muffin pans.
Bake at 350° for 30 minutes or until toothpick inserted in the middle comes out clean.
