Jalapeño Popper Chicken in Air-Fryer

Equipment

Ingredients

  • 4 slices bacon, cooked and crumbled
  • 1 slice uncooked bacon*** cut in half
  • 3 ounces cream cheese, softened
  • 1/4 cup pickled jalapeño, diced
  • 1/2 cup shredded smoked Gouda cheese*, divided
  • 2 boneless, skinless chicken breasts

Instructions

  • In a medium bowl, whip cream cheese. Stir in crumbled bacon, diced jalapeños, and shredded cheese.
  • Cut a slit lengthwise into the top of each chicken breast making a “pocket” be careful not to cut all the way through.
  • Stuff the cream cheese mixture into each pocket. Place 1/2 slice bacon on top of the cheese.
  • Place chicken in air fryer basket and set Air Fry to 350. Air-fry for 20 minutes.**

Notes

*Substitute sharp cheddar or mozzarella cheese.
**Cooking time can vary between Air Fryer brands and thickness of the chicken breast. Cook a few minutes longer if necessary.
***Placing the uncooked bacon on top of stuffed chicken will keep it moist.
