Cabbage, Okra and Cherry Tomatoes

Delicious served over rice as a side dish or light lunch.

  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 head cabbage, shredded
  • 1/4 teaspoon each salt and pepper
  • 4 okra pods, sliced into 1 1/2 inch pieces
  • 1 pint cherry tomatoes, cut in half
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon hot sauce


  • Heat olive oil in a large skillet over medium high heat.
  • Add minced garlic, saute 3 minutes, add shredded cabbage, (pan will be full but cabbage will cook down), saute' for 10 minutes, add okra, season with salt, pepper and red pepper flakes, saute' for 10 minutes longer, add tomatoes and hot sauce. Saute' for 10 more minutes
  • Serve over Rice.
