Ham and Cheese Pasta Salad
Great way to use up leftover ham.

- 1 pound package pasta such as: elbow, fusilli, gemelli, rotelle, cavatappi, or radiatore
- 2 large carrots, peeled and shredded
- 1/4 cup shredded onion
- 1/4 cup diced celery
- 2 1/4 cups mayonnaise
- 1/4 cup milk
- 2 tablespoons sugar
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- salt and pepper, to taste
- 1 1/2 cups diced cooked ham
- 1 cup diced sharp cheddar cheese
Cook pasta according to package directions.
Drain and rinse under cold running water, drain again.
In a large bowl toss together pasta, shredded carrots, onion and celery.
In a small bowl, whisk together mayonnaise, milk, sugar, apple cider vinegar, mustard, salt and pepper.
Add ham, cheddar cheese and mayonnaise mixture to carrots, onion and celery.
Toss gently together. Refrigerate one to two hours before serving.
