- 1/3 cup butter, softened
- 1/4 cup sugar
- 1 egg
- 1 1/2 cups flour
- 1 3.4 oz package instant vanilla pudding mix
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups milk
- 1/2 cup mini chocolate chips
- 1/2 cup coconut
- 1/3 cup packed brown sugar
- 2 tablespoons butter melted
- 1/4 teaspoon ground cinnamon
Line 12 to 18 mini muffin cups with paper liners.
In a medium mixing bowl, cream butter and sugar. Beat in egg.
Combine flour, pudding mix, baking powder and salt.
Add to creamed mixture alternately with milk.
Beat until well blended. Stir in mini chocolate chips.
Fill paper-lined mini muffin cups two-thirds full.
Combine topping ingredients. Sprinkle over batter.
Bake at 375 for 20 to 25 minutes or
until a toothpick inserted near the center comes out clean.
Remove muffins from pan to wire rack to cool.
