Rhubarb Granola Muffins

A delicious rhubarb granola muffin perfect for breakfast, snack time or tea time.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups honey granola or granola of your choice
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh grated lemon peel
  • 2 cups chopped fresh rhubarb

Instructions

  • In a medium bowl, mix together flour, 1 1/4 cups of granola, sugar, baking powder, cinnamon, salt, nutmeg and lemon zest. In a large bowl, beat eggs; whisk in buttermilk, oil and vanilla; stir in dry ingredients until almost combined. Stir in rhubarb. Spoon into well greased large muffin tins.
  • Sprinkle remaining 1/2 cup granola over batter; press lightly on top.
  • Bake at 375 degrees for 25 to 35 minutes or until tester comes out clean.
