Turkey Sandwiches

  • 8 to 12 cups cooked left-over holiday turkey chopped (use both white and dark meat)
  • 1 small onion diced
  • 3 stalks celery diced
  • 2 cans cream of chicken soup*
  • 1 can cream of celery soup*
  • 1 1/2 cups turkey broth*
  • 2 small containers concentrated turkey home-style stock sometimes called: flavor enhancer
  • 1/4 teaspoon poultry seasoning
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon each salt and pepper
  • 1/4 teaspoon thyme leaves
  • buns or rolls of your choice


  • Combine all ingredients in a 5 quart slow cooker.
  • Turn to low and cook for 5 to 6 hours.


Recipe Note:
Depending on how much turkey you have left-over, you may need to add an extra can of soup and/or an extra cup of turkey broth. Can be made ahead of time, frozen for later and re-heated, thawed in a slow cooker. Purchase an extra turkey when they're on sale and make an extra batch of these delicious turkey sandwiches. Serve on buns of your choice.
