Blue By You Potatoes
So easy, yet so good!
- 6 to 8 blue potatoes, cut into quarters
- 1 envelope dry onion soup mix
- 1/4 to 1/3 cup vegetable oil
- large ziplock baggie
- 6 ounces crumbled blue cheese
- blue cheese salad dressing, optional
Preheat oven to 400º Line a baking sheet with parchment paper.
In large ziplock baggie, combine dry onion soup mix and oil. Add potatoes, mix together.
Pour potato mixture onto parchment lined baking sheet.
Bake at 400 degrees for 45 minutes or until potatoes are tender.
Remove from oven.
To serve; sprinkle potatoes with crumbled blue cheese. Serve with blue cheese dressing, if desired.
