In a large bowl, mix flour, sugar, baking powder, baking soda, and salt; set aside.
In a medium bowl beat eggs, strawberry yogurt, water, oil and strawberry extract if using, with wire whisk until blended. Pour egg mixture into flour mixture. Add few drops of neon pink gel food coloring. Stir until moistened. Scoop batter using a large ladle and pour onto griddle. With the back of a spoon, spread into a circle. Sprinkle with mini chocolate chips. Cook a few minutes or until edges begin to brown and bubbles appear on top surface. Flip over and cook until golden brown. Serve with sliced fresh strawberries, additional strawberry yogurt and a berry syrup.
