Cannellini Bean Salad
A popular bean salad to serve at your next picnic or potluck.

- 1/2 cup roasted sweet red pepper strips, chopped (jarred)
- 2 cans (15 oz each) white kidney or cannellini beans, rinsed and drained
- 1 medium red onion, thinly sliced
- 1/4 cup minced fresh basil
- 3 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
In a large bowl, combine peppers, beans, onion and basil.
In a small bowl, whisk together the vinegar, oil, salt and pepper. Pour over bean mixture; toss to coat.
Refrigerate for one hour or longer before serving.
