Egg Roll Crisps with Apple Cider Syrup

Ingredients

  • 1 package egg roll wrappers Twin Dragon
  • vegetable oil
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup powdered sugar
  • 1/2 cup packed light brown sugar or granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1 cup apple cider or juice
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 1/4 cup chopped hazelnuts

Instructions

  • Heat oil in large saucepan to 375 degrees. Stir together sugar and ground cinnamon, set aside. Set aside powdered sugar.
  • Meanwhile make sauce. In medium saucepan, combine sugar, cornstarch and cinnamon; stir in apple cider and lemon juice. Cook until mixture boils and thickens, stirring constantly. Remove from heat; stir in butter and hazelnuts. Set aside.
  • Fry whole egg roll wrappers, one at a time, in hot oil. Fry about 1 minute per side or until golden brown, carefully turning over with slotted spoon. Drain on paper towels.
  • Sprinkle warm fried egg roll wrappers with cinnamon sugar mixture. Drizzle with warm apple cider syrup and sprinkle with powdered sugar. Serve.
