Bacon, Caramelized Onion and Cheddar Quiche

- 2 tablespoons butter
- 1 large sweet onion, sliced
- 5 eggs, lightly beaten
- 1 cup half-and-half
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons dried parsley flakes
- 1/2 lb bulk sausage, browned and drained
- 2 1/4 cups shredded cheddar cheese
- 1 deep dish frozen pie crust
Preheat oven to 375 degrees.Remove pie crust from freezer and set aside
Melt butter in a small nonstick skillet and cook onion until soft and light brown. About 10 minutes. Let cool slightly.
In a large bowl, whisk together eggs, half-and-half, salt, pepper and dried parsley.
Stir in browned sausage and 2 cups cheese. Stir in browned onion.
Pour filling into pie crust, sprinkle top with remaining cheese, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.
Serve warm or chilled.
