Ingredients
2lbsground beef
1largeonion, chopped
2garlic cloves, minced
4celery ribs, chopped
4large potatoes, peeled and cubed
4large carrots, peeled and sliced
6mini sweet peppers, sliced (red, orange, yellow)
1cupmedium pearl barley
1quartwater
32ozcarton beef broth
128 oz candiced tomatoes, undrained
8ozfrozen cut green beans
2bay leaves
1teaspoondried basil
1teaspoondried oregano
1teaspoondried thyme
1teaspoonsalt
1/4teaspoonblack pepper or to taste
Instructions
In a large soup kettle, brown meat and onion, garlic and celery over medium heat until meat is no longer pink; drain. Add all remaining ingredients; bring to a boil. Reduce heat and simmer, uncovered for 1 1/2 hours or until vegetables are tender. Remove bay leaves before serving.
