Impossible Coconut Pie

- 1 cup coconut
- 3/4 cup sugar
- 1/2 cup Original Bisquick Baking Mix
- 1/4 cup butter, softened
- 2 cups canned coconut milk
- 1 1/2 teaspoons vanilla extract
- 4 eggs
- whipped cream. optional
Heat oven to 350°
Grease 9 inch pie plate with non-stick cooking spray.
In medium bowl, stir all ingredients together until blended, pour into pie plate.
Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean.
Cool on wire rack. Serve with whipped cream, optional
Cover and refrigerate any left-overs.
