Whole Berry Cranberry Sauce

Equipment

  • canner, jars, lids and rings

Ingredients

  • 8 cups  fresh cranberries
  • 4 cups sugar
  • 4 cups water
  • zest from one orange

Instructions

  • Wash cranberries; drain.
  • Combine sugar and water in a large saucepan.
  • Boil 5 minutes. Add cranberries.
  • Continue boiling, without stirring, until skins burst.
  • Stir in orange zest.
  • Ladle hot cranberry sauce into hot jars, leaving 1/2-inch headspace.
  • Adjust two-piece caps. Process 15 minutes in a boiling-water canner.
  • Remove jars from canner using tongs. Set jars aside, undisturbed for 24 hours.
