- 3/4 cup diced cooked bacon
- 1/2 cup shredded Swiss cheese
- 3 eggs, beaten
- 1 cup milk
- 1/4 cup butter, melted
- 1/2 cup biscuit/baking mix
- 1/4 teaspoon ground mustard
- 2 tablespoons grated Parmesan cheese
In a small bowl combine the bacon and Swiss cheese.
Divide bacon and cheese mixture among 12 to 18 well greased mini muffin cups.
In a 4 cup glass measuring cup with spout combine the remaining ingredients, just until blended.
Slowly pour over bacon and cheese mixture.
Bake at 375° for 20 to 25 minutes or
until a toothpick inserted near the center comes out clean.
Let stand 5 minutes before removing from pan.
