Buckwheat Zucchini Fritters

A wonderful way to eat zucchini!

Ingredients
  • 2 medium zucchini, coarsely grated
  • 1 shallot, grated
  • 1 egg, whisked
  • 1/2 cup feta cheese, crumbles
  • 1/3 cup buckwheat flour
Directions
  1. Lightly salt zucchini, let sit 10 minutes, squeeze out excess liquid.
  2. Mix all ingredients together.
  3. Heat oil in a deep cast iron skillet to 375°
  4. Form zucchini mixture into patties.
  5. Drop mixture into hot oil.
  6. Fry 4 minutes per side.
  7. Drain well on paper towels.
  8. Season with salt and pepper.
  9. Serve with Tzatziki Sauce
