Buckwheat Zucchini Fritters
A wonderful way to eat zucchini!

- 2 medium zucchini, coarsely grated
- 1 shallot, grated
- 1 egg, whisked
- 1/2 cup feta cheese, crumbles
- 1/3 cup buckwheat flour
Lightly salt zucchini, let sit 10 minutes, squeeze out excess liquid.
Mix all ingredients together.
Heat oil in a deep cast iron skillet to 375°
Form zucchini mixture into patties.
Drop mixture into hot oil.
Fry 4 minutes per side.
Drain well on paper towels.
Season with salt and pepper.
Serve with Tzatziki Sauce
