Apple Yogurt Pancakes

  • 2 cups buttermilk complete pancake mix
  • 1 cup strained yogurt
  • 1/2 to 1 cup water
  • 1/2 teaspoon ground cinnamon
  • 1 cup apple pie filling
  1. Remove apples from pie filling, dice apples. Measure diced apples to make 1/2 cup.
  2. In a medium bowl, stir together pancake mix, strained yogurt, cinnamon, and apples. Add 1/4 cup of water at a time, stirring well after each addition. Add more water and continue to stir until desired consistency.
  3. Heat a large griddle to 350 degrees. Pour a small amount of oil on griddle, wipe off excess with paper towel. Ladle a 1/4 cup of the batter onto hot griddle. Cook until bubbles appear on surface. Turn pancakes over. Cook until pancakes are brown on both sides. Continue with remaining batter.
  4. Serve with butter, maple syrup, yogurt and additional apple pie filling.
