  • 6 ears corn, shucked and cleaned
  • 1/2 cup mayonnaise
  • chili powder, to taste
  • 1 cup grated Parmesan cheese or Cotija cheese
  • freshly chopped cilantro, optional
  • lime wedges, for serving
  1. Preheat grill or grill pan to medium-high. Grill corn, turning often, until slightly charred on all sides, about 10 minutes.

  2. Brush corn with a layer of mayonnaise and sprinkle with chili powder, cheese and cilantro if Using. Serve warm with lime wedges.
