  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 tablespoons ground flax seeds
  • 1 cup pumpkin not pumpkin pie filling
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs at room temperature
  • 1/4 cup melted butter slightly cooled
  • 1/4 cup canola or vegetable oil
  • 1/4 cup water
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 cup chopped crystallize ginger
  • 1 cup Paradise extra fancy fruit cake mix
  1. Preheat oven to 350 degrees Grease a 8 x 4 x 3 -inch loaf pan generously with nonstick cooking spray or butter. Set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.
  3. In a large bowl, whisk together the pumpkin, brown sugar, sugar, eggs, melted butter, oil, water, and vanilla extract.
  4. Add the dry ingredients and stir until just combined. Fold in ginger and fruit cake mix. Don't over mix the batter.
  5. Pour the pumpkin batter into the prepared loaf pan and smooth with a spatula.
  6. Place the loaf pan in the oven and bake for 45 to 60 minutes, depending on your oven. The loaf is done when a toothpick inserted into the center comes out clean.
