Ingredients
  • 2 cups blueberry buttermilk complete pancake mix
  • 1 cup water
  • 4 cups oil for frying
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • maple syrup
Directions
  1. Preheat oil to 350º in a deep fryer or large deep skillet.
  2. Stir together sugar and cinnamon, set aside.
  3. Stir together pancake mix and water, Set aside for 10 minutes.
  4. Use a small ice cream scoop to drop batter into hot oil.
  5. Fry for 2 to 4 minutes or until golden brown.
  6. Remove from oil with large slotted spoon.
  7. Drain on paper towels for about 30 seconds.
  8. Roll in cinnamon sugar mixture. Serve with warm maple syrup.
