Apple Date Baked Oatmeal

Ingredients
  • 3 cups old-fashioned oats
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 2 eggs
  • 2 cups fat-free milk
  • 1 medium apple, shredded
  • 1/3 cup chopped chopped dates
  • 1/4 cup chopped pecans
  • maple syrup for serving, optional
Directions
  1. In a large bowl, combine the first six ingredients. Whisk eggs and milk; stir into dry ingredients until blended. Let stand for 5 minutes. Stir in the apple, dates and pecans. 

  2. Transfer to an 8-inch square baking dish coated with a non-stick cooking spray. Bake, uncovered, at 350 degrees for 35-40 minutes or until edges are lightly browned. Serve with maple syrup if desired.
