Cherry, Orange Marmalade Bread

A fantastic quick bread with a layer of orange marmalade running through it!

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons grated orange zest
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup water
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1/4 cup dried cherries
  • 4 tablespoons orange marmalade

Instructions

  • Preheat oven to 350º Grease and flour one 9 x 5 loaf pan.
  • In a large bowl, combine flour, sugar, orange peel, baking powder, baking soda and salt.
  • In a small bowl, beat with a fork egg, water, orange juice and oil.
  • Stir into dry ingredients, just until moistened. Fold in dried cherries. Spoon into prepared pan. Spoon marmalade over batter. Cut through marmalade with a knife to swirl.
  • Bake at 350 for 65 to 70 minutes or until toothpick inserted near center comes out clean.
  • Cool 10 minute in pan. Remove bread from pan and cool on wire rack.
  • Cool completely.
