Cinnamon Spiced Bananas

Instead of spooning over vanilla ice cream, try plain Greek yogurt.

Ingredients

  • 2 tablespoons butter
  • 4 tablespoons packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnmon
  • 3 large bananas
  • 2 cups plain Greek yogurt
  • ground cinnamon, optional

Instructions

  • In a small skillet over medium low heat melt butter. Stir in brown sugar, vanilla extract and ground cinnamon. Heat stirring constantly, for 2 minutes.
  • Meanwhile peel bananas. Slice bananas in half lengthwise, then slice banana slices in half. Should have a total of 12 slices. Add banana slices to the butter/brown sugar mixture and heat for 2-4 minutes or until bananas are warmed and mixture is bubbly.
  • Divide Greek yogurt between 4 bowls. Spoon bananas with sauce over yogurt. Sprinkle with cinnamon if desired. Serve.
