1 15.5 oz can cannellini beans, rinsed and drained
1 14.5 oz canfire-roasted diced tomatoes with basil and oregano
6cupsbaby spinach
1/4teaspoonsalt
freshly ground black pepper to taste

Instructions
In a large skillet over medium heat, fry the bacon until crisp. With a slotted spoon, remove bacon and place on a paper towel lined plate to drain. Drain bacon fat from skillet leaving 2 tablespoons in pan. Add the oil and let it get hot. Add the garlic and cook for 1 minute. Add the beans and tomatoes. Cook for 5 minutes over medium heat.
Add the spinach, salt, pepper and bacon. Cook until the spinach wilts, about 5 minutes. Serve immediately with fresh Parmesan cheese shavings.
