Ingredients
2poundsbulk Italian sausage
1tablespoonolive oil
3clovesgarlic, minced
1medium onion, chopped
1green pepper, chopped
1hot banana pepper, chopped
4ribs celery, chopped
4carrots, peeled and sliced
juicefrom 1 lemon
2earsfresh corn, remove kernels, or 1/2 cup frozen corn
1cuplentils
2tablespoonspizza seasoning
salt and pepper to taste
232 oz cartonsbeef broth
232 oz cartonswater
128 oz can diced tomatoes
115 oz packagecheese filled tortellini
parmesan cheese, optional
garlic bread, optional
Instructions
In Dutch oven or large soup pot, heat oil over medium heat, brown sausage, garlic, onion, peppers, celery, and carrots until sausage is browned and vegetables are tender. Drain.
Add juice from lemon, corn, lentils, pizza seasoning, salt, pepper, beef broth, water, and tomatoes. Bring to a boil, reduce heat, cover and simmer for 1 hour.
Add tortellini, simmer 5 to 10 minutes longer.
Serve with parmesan cheese and garlic bread.
Notes
Cheese filled ravioli can be substituted for the cheese tortellini.
