A delicious light and airy quick bread with a delicate cinnamon swirl running through it

  • 1 1/3 cups sugar
  • 2 teaspoons ground cinnamon
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 1/3 cup oil
  1. Grease and flour a 9 x 5 inch loaf pan. Mix 1/3 cup sugar and cinnamon; set aside.
  2. In a large mixing bowl, combine flour, baking powder, salt and remaining sugar.
  3. In a medium bowl, combine egg, milk and oil; add to flour mixture. Stir just until moistened.
  4. Pour half the batter into prepared pan. Sprinkle with half the cinnamon mixture.
  5. Repeat with remaining batter and cinnamon mixture. Draw a knife through batter to marble.
  6. Bake at 350ยบ for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool in pan for 10 minutes. Remove from pan. Cool.
  8. Wrap and store bread overnight before slicing.
