Pineapple Cherry Zucchini Bread

- 1 egg
- 1 cup shredded zucchini
- 1/3 cup vegetable oil
- 4 ounces crushed pineapple, drained
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon allspice
- 1/4 teaspoon baking powder
- 1/2 cup dried cherries or cranberries
- 1/2 cup sliced almonds, chopped
In a bowl, combine the egg, zucchini, oil, pineapple, and vanilla extract.
Combine the dry ingredients; stir into the egg mixture just until moistened.
Fold in the dried fruit and almonds. Pour into a greased 9 x 5 inch loaf pan.
Bake at 350 for 50 to 60 minutes or until a toothpick inserted near the center comes out clean.
Cool on wire rack, in pan for 10 minutes.
Remove bread from pan, cool on wire rack.
