Ingredients
2largechicken breasts, skin on, bone in OR
4boneless, skinless chicken breasts
1/3cupkey lime juice
1/4cuphoney
1/2cupdiced crystallized ginger
1small sweet onion, chopped
3cloves garlic, minced
2TablespoonsDijon mustard
1/4teaspoonground ginger
1teaspoonchile lime seasoning blend
freshly ground pepper, to taste
Instructions
Place chicken breasts in a shallow baking dish or in a large gallon size ziplock baggie. Mix remaining ingredients and pour over the chicken breasts. Cover and refrigerate several hours or overnight.
Grill Method: Preheat the grill. Drain chicken breasts and grill them for 15 to 25 minutes, turning halfway through the cooking time or until the juices run clear. *Cooking times will vary*
Oven Method: Preheat the oven to 375 degrees. Drain chicken breasts. Place the chicken on a baking dish. Bake for 45 minutes to 1 hour or until golden brown and cooked through.
