Hot Chicken Corn Dip

The perfect, cheesy dip to make during corn season.

Course: Appetizer, Dip
  • 1 8 oz package cream cheese, softened
  • 1/2 cup miracle whip salad dressing
  • 1 cup shredded smoked Swiss cheese
  • 1/2 cup finely shredded Parmesan cheese, divided
  • 2 green onions, sliced, divided
  • 1 12 oz can chicken, drained
  • 1/4 cup roasted red peppers, chopped
  • 1 1/4 cups fresh corn kernels, divided
  1. Heat oven to 375 degrees

  2. Cream together cream cheese and miracle whip in medium bowl. Add smoked Swiss cheese and Parmesan cheese. Mix well.

  3. Lightly mix in green onions, chicken, roasted red peppers and corn. Lightly spray an ovenproof baking dish with non-stick cooking spray. Spoon chicken mixture into baking dish.

  4. Bake for 30-35 minutes or until dip is hot and bubbly.  Serve with corn chips. Garnish with sliced green onions, optional.
