Bacon, Caramelized Onion and Cheddar Quiche

Ingredients

  • 2 tablespoons butter
  • 1 large sweet onion, sliced
  • 5 eggs, lightly beaten
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons dried parsley flakes
  • 1/2 lb bulk sausage, browned and drained
  • 2 1/4 cups shredded cheddar cheese
  • 1 deep dish frozen pie crust

Instructions

  • Preheat oven to 375 degrees.Remove pie crust from freezer and set aside
  • Melt butter in a small nonstick skillet and cook onion until soft and light brown. About 10 minutes. Let cool slightly.
  • In a large bowl, whisk together eggs, half-and-half, salt, pepper and dried parsley.
  • Stir in browned sausage and 2 cups cheese. Stir in browned onion.
  • Pour filling into pie crust, sprinkle top with remaining cheese, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.
  • Serve warm or chilled.
