Sweet Potato, Honey Goat Cheese, Cranberry Rounds

A delicious and tasty appetizer alternative.

Course: Appetizer
Servings: 24 rounds
  • 3 teaspoon extra virgin olive oil
  • 2 large sweet potatoes, peeled and sliced into 1/4 inch rounds
  • 5 ounces honey goat cheese, room temperature
  • kosher salt and fresh ground black pepper, to taste
  • 1/4 cup dried cranberries (24 total)
  • honey for drizzling
  1. Preheat oven to 425 degrees.
  2. Spray a rimmed baking sheet with non-stick cooking spray or line with a sheet of parchment paper.

  3. In a large bowl toss together the sweet potato slices, olive oil, salt and pepper.
  4. Lay the slices out on the baking sheet in a single layer, spray the tops lightly with more non-stick cooking spray.

  5. Place pan in the oven and bake for 15 minutes, flip slices over and bake for another 12-15 minutes or until tender.

  6. Spoon 1/2 teaspoon goat cheese onto each sweet potato round.

  7. Top goat cheese with a dried cranberry, drizzle with honey.

  8. Serve warm or at room temperature.
