Warm Turkey Fiesta Dip is a great and delicious way to use up left-over turkey don’t have left-over turkey?? No worries, use a rotisserie chicken, a nice and easy alternative. Today is Thanksgiving and we enjoyed our Thanksgiving Dinner at noon for two reasons.  number one, I had this dip in mind and wanted to try it asap and reason number two, the Green Bay Packers play the Chicago Bears tonight!!

This recipe is perfect to bring to any party. Not only will Warm Turkey Fiesta Dip be the talk of the party, it will be a welcome change from all of the usual chilled dips served at most parties and gatherings. Warm Turkey Fiesta Dip

A fantastic spicy dip and a great way to use up left-over holiday turkey.

Ingredients

  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 1 teaspoon chili powder
  • 1/4 teaspoon, each salt and pepper
  • 1/2 teaspoon ground cumin
  • 4 ounces McCormick taco chipotle and garlic skillet sauce or
  • 4 ounces salsa of your choice
  • 1 8 oz. package cream cheese, room temperature
  • 1/4 cup mayonnaise or sour cream
  • 1 10 3/4 oz can condensed cream of chicken soup, undiluted
  • 1 10 oz can diced tomatoes and green chilies
  • 1 4 oz can diced green chilies, drained
  • 4 cups shredded cooked turkey or chicken
  • 2 cups shredded Mexican cheese blend, divided
  • 3 green onions, thinly sliced
  • corn chips or tortilla chips

Instructions
 

  • In a large skillet, saute' green pepper, onion and garlic in oil until tender. Add the chili powder, salt, pepper, and cumin; cook 1 minute longer. Add the chipotle and garlic skillet sauce or salsa and heat for 5 minutes. Remove from heat and set aside.
  • In a large bowl, beat cream cheese and mayo or sour cream until smooth. Add the soup, tomatoes and diced green chilies. Stir in the turkey, 1 cup cheese blend and green pepper mixture.
  • Transfer to a greased 11 x 7 inch baking dish.
  • Sprinkle top with green onions and remaining cheese blend.
  • Bake uncovered at 350º for 25 to 30 minutes or until bubbly.
  • Let stand for 5 minutes. Serve with corn chips or tortilla dippers.
