A Week of Sourdough Recipes Sourdough Blintzes are another recipe adapted from the recipe booklet; Simply Sourdough, The Alaskan Way” by Kathy Doogan. Simply Sourdough has so many delicious recipe that you will definitely want to try. I’ve made half of the recipes, so far, each and every one of the recipes have turned out sensational and have become family favorites.

What is a Blintz?
A blintz pronounced [BLIHNTS] is a tender, ultra thin pancake that can be made with any number of flours. The blintzes are rolled to enclose a sweet or savory filling. The fillings include cottage or ricotta cheese, fruit or meat mixtures. The blintzes are then sautéed until golden brown and served with sour cream. Sourdough blintzes are truly delicious. The ricotta cheese filling was super and the tayberry jam sensational.
Blini
Pronounced [BLEE-nee] Hailing from Russia, blini (singular, blin) are small, yeast-raised pancakes that are classically served with sour cream and caviar or smoked salmon. Blini are traditionally made with buckwheat flour, although lighter versions combine buckwheat and wheat flours. Blintz and blini are often confused as one and the same. Though they are similar, they are indeed different.

Sourdough Blintzes
Ingredients
- 2 cups sourdough starter
- 2 eggs
- 1/4 cup vegetable oil
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- Filling:
- 1 cup ricotta cheese
- 1 egg yolk
- 1 tablespoon sugar
- 1 tablespoon melted butter
- 1/4 teaspoon ground cinnamon
- pinch of salt
- 1/2 teaspoon lemon zest
Instructions
- To make pancakes:
- Mix starter, eggs, and oil in a bowl. Add sugar, salt and soda. Mix well (batter will be thiUsing about 1/4 cup batter for each, make large (7" to 8" diametepancakes on a lightly greased griddle or skillet, preheated to medium heat. Cook until bubbles appear on top and surface looks dry..Do Not Turn Over! Remove pancakes from griddle and set aside until all are cooked. Combine all filling ingredients in a bowl and mix well. Place about a tablespoon of filling in the center of the baked side of each pancake. Fold all four sides over the filling to make an envelope. Place on a greased preheated griddle, seam side down, cook over medium heat until brown, turning once.
- Top with sour cream, jam and/or fruit if desired.

Good Evening Lynn, I like the sound of your sourdough Blintzes…. they look a little like our English crumpets, except our crumpets are small and round. I was about to ask about Marionberries and Tayberries as I had never heard of them and as I read further down, you had kindly given an explanation of both. What a lovely treat to be given these delightful jams as gifts, I especially like the strawberry and Rhubarb flavour.
Using sourdough is still on my list of things to do…. and I know exactly where to come to find the information and recipes.
